Donald’s Honey Cake

           

Preheat oven to 180C/350F/gas mark 4.

Grease a 900g/2lb loaf tin and line the base

with greased greaseproof paper.

 

Put 140g/5oz butter, 110g/4oz soft light brown sugar and

170g/6oz clear honey into a saucepan and melt over a low heat.

Remove and cool. Beat in 2 beaten eggs and fold in

225g/8oz self raising flour (sifted) using a large metal spoon.

Pour into the tin and spread evenly. top with

15g/0.5oz flaked almonds

Bake in the centre of the oven for 45 minutes or until top

springs back when pressed lightly with a fingertip

Remove from oven, cool in tin for 10 minutes, then

turn on to wire rack and cool completely.
