Garlic Honey

           

30 Cloves garlic, peeled

1½ lbs liquid honey

 

Place the garlic in a big glass jar (e.g. Kilner jar).

Add the honey leaving a 2cm gap between the

honey and the rim.

Cover and place in a warm place for at least a week

turning occasionally.

Gradually the garlic will dissolve in the honey converting

it to a garlic syrup.

Garlic honey makes an ideal addition to any marinade

or salad dressing. It can be used to glaze meat before

roasting or if you are really a garlic lover try it with ice cream.

 

 

Christmas Cordial

(The Scottish Beekeeper  -December Recipe)

 

Introduction

Scottish ingredients are used to produce a cordial suitable for drinking at Christmas and Hogmanay.

 If kept for months, it may begin to gel a little, but in a glass, micro-waved for a few seconds, it should

 return to a liquid state and be nicely warmed.

Ingredients

2 lbs (900 g) raspberries, 1lb (450 g) honey

            375 ml (12.5 fl oz) whisky (a half- bottle)

Method

Put the raspberries into a large saucepan with a little water and, stirring regularly, bring carefully to the boil.

 Using a spoon, gently press on the fruit, from time to time, to break it up. Once at the boil, allow it to cool

 a little and then strain through a jelly bag. This should give about 400-SOOmls of juice. Add 1lb of honey

 and stir until dissolved. Stir in the whisky until well mixed. There should be enough cordial for one 750 ml

 bottle and one half-bottle, plus a little left over for tasting.
