Gelatin Pudding




You've had the marshmellow puddings, now here is the other magic ingredient of the post-war era...gelatine! Both my mother and our dear English friend of the same generation, kate Rimmer, made this so it must have been a transatlantic recipe.

3 cups yogurt or pureed fruit (berries, stewed fruit such as apricot or rhubarb)
2 packages gelatin (or flavored jello)
Flavor with 2 - 4 T sugar and any of the following:
vanilla, rum extract, lemon rind, lemon juice

Mix 1/4 cup of water with gelatin and heat until melted. Add the rest of the ingredients.

Serve with cream or custard.
