Mom's Jam
I loved my mother's jam and so did my grandfather. It was made with the Nectarberries that grew next to the cottage in the garden where he lived! Nectarberries were a cross between raspberries and blackberries and were delicious. Gammy and Bapa were originally given the nectarberry bushes by Rev and Mrs. Martin. Rev Martin was a retired English vicar who came briefly to St. Phillips. Anyway no one has ever been able to find nectarberry vines again... the closest is the ollalaberry . I spent some part of every day during the late summer either watering or collecting berries so that Mom could make jam.
Sterilize jars by filling with boiling water.
Measure 1 cup fruit to 1 cup sugar.
Mash fruit and add sugar and lemon juice.
Bring to a boil in a large pot. Watch carefully so it doesn't boil over. Stir constantly to prevent burning.
heat to around 200 degrees.
Cook until a small amount dropped on a plate will stay in place. When ready scim off the foam and pour into jars.
