Joan's Recipe Slot

Grasmere Cake

12 oz Wholemeal self-raising flower
1 tsp. Mixed spice
1½ tsp. Bicarbonate of soda
6oz. Sunflower margarine
½ pint (generous) semi-skimmed milk
tblsp Lemon juice (mix with milk)
2oz Mixed peel
2oz Currants
4oz Sultanas
6oz Light muscovado sugar

Method.

Rub margarine into flour, add spice and bicarb. Add the rest of the ingredients and stir well. Leave overnight. Line an 8” tin - bake at Reg.3 for 1¾ hours or until ready. Cool on a wire tray.
