Joan's Recipe Slot

Sponge Parkin

Ingredients.

2 Cups Self Raising Flour
1 Cup Caster Sugar
4 oz Margarine (chopped up)
1 level tspn Bicarbonate of Soda
2 tspn Ginger
1 tspn Mixed Spice
1 heaped tblspn Syrup
1 Egg (beaten)
1 Cup Milk (boiled)
The above mixture should resemble a batter.

Method.

Put everything into a bowl. Pour in boiled milk and mix well. Put in a lined dripping tin and bake at Reg. 4 for about 3/4 hour.
